
Summer Pea Salad

Summer Pea Salad with Ripped Basil, Avocado & Chilli
Ingredients
350g Frozen Peas
Frozen Diced Avocados
Handful Fresh Basil Leaves
1 Red Chilli
4 Scallions, Chopped
Juice & Zest of 1 Lemon
50ml Rapeseed Oil
Salt & Pepper
Toss the diced avocados in with the lemon juice and zest.
Mix in with the peas, scallions and oil. Season to taste and then rip the basil leaves all over.
Finely slice the chilli and scatter over the top.
