Summer Pea Salad with Ripped Basil, Avocado & Chilli
Ingredients
350g Frozen Peas
Frozen Diced Avocados
Handful Fresh Basil Leaves
1 Red Chilli
4 Scallions, Chopped
Juice & Zest of 1 Lemon
50ml Rapeseed Oil
Salt & Pepper
- Toss the diced avocados in with the lemon juice and zest. 
- Mix in with the peas, scallions and oil. Season to taste and then rip the basil leaves all over. 
- Finely slice the chilli and scatter over the top.
