
Beef Massaman Curry
Serves: 4
Beef Curry with Massaman Curry Paste and Causeway Prime Steak Pieces
4 Dried Chillies (rehydrated in boiling water)
2 tsps Ground Coriander
1 tsp Ground Cumin
1/4 tsp Cinnamon
2 Garlic Cloves
1 Lemongrass Stick
1 tbsp Grated Ginger
1 Small Onion
Massaman Curry Paste
For The Curry
650g Causeway Prime Steak Pieces
2 tbsps Oil
400ml Coconut Milk
2 tbsps Massaman Curry Paste
2 tbsps Soy Sauce
1 Red Chilli
50g Salted Peanuts
Fresh Coriander
1 Lime (cut into wedges)
Heat a tablespoon of the oil in a large pan and when smoking hot add the beef and seal well. Transfer beef to a casserole and set oven to 180ºc.
Fry the onion in the remaining oil and then add 2 tablespoons of the paste, the soy and the coconut milk. Place a lid on top and cook for about an hour and a half or until beef is fork tender.
Finely shred the chilli and chop the peanuts coarsely. Spoon the beef into bowls and garnish with the chilli, nuts and coriander. Squeeze over the lime juice and serve.
